I recently wrote about the importance of evaluating your corporate break room to ensure that it supports the health of employees. Here is a recipe for an “Executive Smoothie” that I'll be serving to executives at the Sun Valley Company next week:
-1-2 T. lemon juice
-1 cup of washed spinach
-2 t. honey
-3-4 oz coconut water
Place all the ingredients in a blender, and blend until smooth. You can add a few ice cubes if you like your smoothie extra cold.
This drink is packed with nutrients (potassium, folate, vitamin A and C), and the coconut water adds electrolytes. Pair the smoothie with a piece of toast with almond or peanut butter for a great breakfast or hearty snack.
Feel free to get creative, you can swap out any fruit such as frozen blueberries, strawberries or mangos. Also, if the lemon juice is too tart try a splash of orange or apple juice.
