Kathryn on CBS WBBM-TV Chicago to Inspire Healthy Lunches

I had such a great time on with CBS 2’s Marissa Bailey talking about getting kids interested in healthy lunches. We went through three examples of lunches that might motivate children based on their specific personalities.

The advice was based on my recent book (illustrated by my then 12-year old son, Alexander): Give It a Go, Eat a Rainbow.

#1: A lunch for a kid that wants to do well in school (the color RED is great for your heart and mind):

Ingredients:
Chicken salad wrap (with whole grain tortilla and dark greens)
Zucchini and yellow squash disk
cherry tomatoes (for brain health)
mixed berries
2 bite “sweet treat” (chocolate caramel)

#2: A lunch for a kid that wants to do well in sports (BLUE/PURPLE is great for energy!)

Ingredients:
Turkey salad with dark greens and parmesan cheese
cauliflower
carrots
strawberries (for brain health)
blueberries (for energy!)
2 bite “sweet treat” (chocolate peanut butter cup)

#3: A lunch for a kid that wants to have a healthy smile (GREEN is great for teeth and bones).

Ingredients:

Chicken and edamame
kale chips (green is great for your teeth/smile!)
rainbow salad –strawberries, peppers, carrots, mango, green beans, blueberries and cauliflower on a bed of spinach
2 bite “sweet treat” (whole grain chocolate chip cookie)
