Roasted Asparagus

Asparagus is one of my favorite vegetables. One cup provides an excellent source of fiber (3 grams), vitamin K, folate, and iron.

Asparagus makes the perfect side dish.  I enjoy it with grilled chicken or baked cod.

Ingredients:

– 1 lb asparagus

– 1 T. extra virgin olive oil

– 1/2 t. kosher salt

– juice from 1/2 lemon

Directions:

Preheat oven to 400 Degrees.   Place trimmed asparagus on a baking sheet (I line mine with foil or parchment paper).  Add oil and salt and roast for 15-20 minutes, rotate once. Just before serving, add lemon juice and enjoy!
