No Bake Homemade Granola Bars

Grease a 9 x 13 inch pan with coconut oil. Mix in a large bowl and set aside:

– 1 1/4 cup seeds/nuts
– 1/2 cup oat bran
– 1/2 cup brown rice cereal
– 1/4 cup ground chia or flax seeds
– 1 t sea salt
– 1 cup dried unsweetened cranberries, cherries or raisins
– 1/2 cup shredded coconut

Combine in saucepan over low heat until it thickens:

– 1 cup brown rice syrup
– 1 cup nut or seed butter
– 1 T coconut oil
– 1 T vanilla

Pour over oat mixture and stir until evenly incorporated.  Optional:  Add 1/2 cup chocolate chips or cacao nibs. Spread into greased pan and cool to room temperature before cutting.  Serves 16 to 20.
