Banana Soft Serve

What do you do with your over-ripe bananas? Toss them? Make banana bread?

Ugh. No more banana bread, please!

I had several over-ripe bananas and was searching the internet for inspiration.   I came across several recipes for one-ingredient ‘soft-serve’ that people were just raving about.  I was both intrigued and skeptical;  I like bananas, but really?  Soft-serve?!

I wanted to see what all the hype was about.  I quickly sliced my bananas into quarter-sized pieces and placed them in an airtight bag in the freezer.  Within a few hours, my bananas were frozen solid.  I placed the equivalent of one banana (slightly defrosted)  in my food processor.  One-ingredient soft serve did not seem sufficient so I threw in a tablespoon of almond butter and processed until smooth.

The result: the banana soft-serve is my new food crush!  I love it!  I have it as a post-workout snack or for dessert.  It is so delicious and easy to make!  You can substitute any nut butter of your choice (peanut butter is also very tasty)!
