Have this recipe on hand just in case you start to feel a cold coming on.
When your down and out, you need lots and lots of liquids. Food isn't that appealing when you're sick, but you do need nutrients to help you heal.
What to do: First, go out and get an organic rotisserie chicken. Take off all the meat and reserve. Place bones into a slow cooker and cover with water. Add a little lemon juice and/or apple cider vinegar (why? because this allows better leeching of the minerals in the bones). Cook on high for a few hours, then leave on low for the rest of the day. Chill in order to skim off the fat at the top. What's left over is your broth that you'll use for the soup.
Now you just need some veggies and spices.
Ingredients (other than the chicken meat and broth):
– one large onion, diced
– 2 large leeks
-1-2 cloves chopped garlic
– one bunch organic parsley (leaves and stems)
– 4 stalks celery (whole, with leaves)
– A bunch of carrots, cut into chunks (you can also use parsnips and/or turnips)
– sea salt or Kosher salt and pepper, to taste
– 1⁄2 tsp. turmeric or cayenne pepper, optional
Bring soup to a boil and then reduce to a simmer. Add in your chicken meat that you pulled off the rotisserie chicken. Keep serving your patient homemade soup (and love!) until they get better.
