
Who doesn’t love chocolate cupcakes?
This cupcake recipe is from my daughter’s friend Lauren, who always came over to our house after school for living room dance parties.
She shared this recipe with us on a tiny piece of paper, and I’m happy to memorialize it here on the Make Everything Fun website.

Ingredients:
1 1/2 cups flour
1 cup sugar
1/3 cup cocoa
1 t baking soda
1/2 t salt
1 cup water
1/2 cup olive oil
2 T vinegar
2 t vanilla
1 egg
Directions:
Heat oven to 350 degrees. Put the cupcake wrappers in the cupcake pan. In a large mixer bowl, stir together flour, sugar, cocoa, baking soda, and salt.
Add water, oil, egg, vinegar, and vanilla; beat on medium speed of electric mixer 2 minutes or until well combined.
Pour batter into the prepared pan. Bake for 15 to 20 minutes or until a wooden toothpick inserted in the center comes out clean. Cool in the pan on a wire rack.
