Chocolate Snack Cake

We could not live without this recipe on birthdays in our house.  You can frost it with buttercream frosting, jazz it up with chocolate ganache, or tone it down by adding nothing to the top except a sprinkle of powdered sugar.

Ingredients:
-3 cups flour (we split – 1.5 cups white and 1.5 whole grain flour)
-2 cups sugar
-2/3 cup unsweetened cocoa
-2 teaspoons baking soda
-1 teaspoon salt
-2 cups water
-2/3 cup vegetable oil (we use olive oil)
-2 eggs
-2 tablespoons white vinegar
-2 teaspoons vanilla extract
-1 cup semi sweet chocolate chips

Directions:
1. Heat oven to 350 degrees. Grease and flour bottom of 13 x 9 x 2 inch baking pan.  In large mixer bowl stir together flour, sugar, cocoa, baking soda and salt.

2. Add water, oil, eggs, vinegar and vanilla; beat on medium speed of electric mixer 2 minutes or until well combined.  Stir in chocolate chips.

3. Pour batter into prepared pan. Bake 45 to 50 minutes or until a wooden toothpick inserted in center comes out clean.  Cool in the pan on a wire rack.

4.  Frost it if you like– then enjoy!
