I’m obsessed with brain food! With avocadoes and MCT (from coconut oil) both on the top 10 foods for your brain list, this recipe is a winner. Top with organic blueberries instead of raspberries and get yourself yet another top 10 brain food.
This recipe is also dairy-free.
Most importantly, it passed the “Elena and her friends” test.
Ingredients:
-1/2 cup coconut water (we got it from a real coconut; Jeff had to use his drill)
-Meat from one coconut (we scooped it out from the coconut after Jeff pried open the coconut)
-1/4 cup water
-1/3 cup honey (we used the Canadian Raw Honey from Glow– amazing!)
-2 soaked dates (remove the pits)
-1 avocado
-6 T cacao powder (we used Dagoba)
-1 t vanilla
-1 t salt (we used Himalayan pink salt)
Directions: Combine ingredients and blend in the Vitamix. Freeze in ramekins for 10 minutes and garnish with fresh fruit. A great healthy alternative to cream, sugar, and eggs.
