Macadamia “cheese”

Every once and a while I give up dairy.  When I do this, I make “macadamia cheese” to get that yummy creamy taste. This photo shows the macadamia cheese spread on a rice cake, which is a fun snack.  

Ingredients:

2 cups macadamia nuts, soaked

1/4 cup nutritional yeast

1/4 cup fresh lemon juice

About ¼ cup water (more or less to taste and desired consistency)

1 t sea salt

Directions:

Add all of your ingredients and 1/2 the water (saving the other half for later) to a food processor and blend on high.

Scrape down sides as needed, then slowly add more water until a thick paste forms.

Taste and adjust flavor as needed.

Blend again to get your desired texture. Top with crushed red pepper flakes for more heat and a little garnish!
