We are so happy to feature a guest post from yet another Junior Chef! This time we welcome Myka from Kentucky. Read Myka’s story below.
Ingredients:
– 2 grilled skinless boneless chicken breasts, cut into bite-size pieces
– 2 stalks celery, chopped
– 1 red apple, peeled and diced
– 1/4 cup raisins
– 1/2 cup mayonnaise
– 1/4 teaspoon curry powder
– Salt and pepper
– 2 (10-inch) whole-wheat tortillas
Directions:
In a large bowl, combine the chicken, celery, apple, raisins, mayonnaise, and curry powder. Stir to combine, and season to taste with salt and pepper.
Divide the mixture between the tortillas, and wrap tightly around the filling from bottom to top, overlapping one end, burrito style. Cut the wraps in half to serve.

Myka is a Let’s Move! poster-child, enjoying healthy eating and participating in Zumba and karate. Myka attends Madeline Breckinridge Elementary School in Lexington Kentucky and is in the 3rd grade. She is very outgoing, creative, and ambitious. Myka has a natural passion to cook and loves to try new recipes. Her favorite food television personality is Paula Deen who is on the food network channel. Myka says, “I was on the Internet and was thinking, You know, anything can be made into a wrap. So I decided that I’d make a curry chicken wrap. For a side: sliced strawberries and a fruit and yogurt smoothie.” Myka’s recipe calls for grilled chicken, but you can use any kind of cooked chicken.
