This Pumpkin Pecan Oatmeal uses the same spices that you’d find in pumpkin pie, making it a delectable and delicious way to start a brisk and busy day.
You can even take this to the next level by topping it with a little maple syrup or whipped cream if you’d like to make it a special occasion!
Ingredients:
– 1 cup old fashioned oats
– ¼ cup packed brown sugar
– 1 teaspoon pumpkin pie spice
– pinch of salt
– 1 cup 2% milk
– ½ cup canned pumpkin (or from a pumpkin if you can bake one the night before)
– 1 egg
– 3 Tablespoons chopped pecans (leave off if nut-free)
Directions:
Combine oats, brown sugar, pumpkin pie spice and a pinch of salt in a rice cooker. Whisk milk, pumpkin, and egg in a small bowl. Pour over oat mixture; stir to combine. Cover and press down “on” button. The button will click up to the “warm” setting when oats are done, about 20 minutes. Unplug cooker. Serve topped with pecans and an extra splash of milk, if desired.
