My son’s favorite whole grain is quinoa, and I’m thrilled that he loves its nutty flavor (and fantastic nutritional profile, especially protein!).
I’m always trying to find something new to do with quinoa. This salad might be fun for kids as the veggies are raw and therefore very crisp and crunchy.
Directions:
Cook up some quinoa in your rice cooker. Wash and chop up some veggies. I used my shredded on my Cuisinart to save time: carrots, celery, cabbage, bell peppers, green onions; whatever you have and like Wash and chop some herbs: I used cilantro and basil, but you should experiment.
*(Optional) Lightly sautee some mushrooms in olive oil; sprinkle on some sesame seeds if you like
*Make the dressing. This is the kicker. So good!
Dressing Ingredients:
– tahini
– miso
– olive oil
– sesame oil
– lemon juice
– coconut water
– garlic
– spices: experiment, but I used a little mustard powder and crushed red pepper
Directions:
Mix it all up. If you want to slightly heat the veggies, just put all the veggies in a bowl first and put the cooked quinoa on top. Let it sit for 10-15 minutes and then add the dressing. So good and so good for you!
