Roasted Red Pepper Soup

This is a great summer soup when it is too hot to cook.

My Vitamix seems to always be in use in my house.  Especially in the summer!  I love that you can blend a soup for about 5 minutes and it comes out slightly warm.

So healthy and so easy!  No hot kitchen.  Just cool and refreshing.

Ingredients:
-Celery- 3 ribs with leaves
-1 jar roasted red peppers (with liquid)
-2 avocados
-1/2 bunch cilantro
-6 oz plain yogurt

-Spices to taste: cumin, chili pepper, crushed red pepper/tabasco/cayenne pepper

Directions:
I add everything to the Vitamix. Blend on high until it warms up just a bit.  Put into serving bowls.  Garnish with fresh herbs and avocado. Enjoy!
