Roasted Red Pepper Soup

My Vitamix seems to always be in use in my house.  I love that you can blend a soup for about 5 minutes and it comes out slightly warm.

So healthy and so easy!


– Celery- 3 ribs with leaves
– 1 jar roasted red peppers (with liquid)
– 2 avocados
– 1/2 bunch cilantro
– 6 oz plain yogurt

– Spices to taste: cumin, chili pepper, crushed red pepper/tabasco/cayenne pepper


I add everything to the Vitamix. Blend on high until it warms up just a bit.  Put into serving bowls.  Garnish with fresh herbs and avocado. Enjoy!
