Spinach Dip


I usually love to cook.

But there are times in life when I'm barely able get through my own to-do list, not to mention putting together something creative to bring to a potluck, parent gathering or other social event.

One of the best “please everyone” dishes you can bring to a social gathering is a dip. You can pair it with all kinds of yummy “crunchy carriers” to please everyone:  chips, gluten free crackers, seed crackers, pretzel sticks, carrot sticks, celery… you see the spectrum?  From the “super healthy” (read: seed crackers) to the “working on eating healthier, or not” (read: pretzel sticks).

In any case, your dip can be moderately healthy*, tasty and easy.

*I adapted this recipe from a cookbook and significantly reduced the amount of fat. It is still a very heavy dish, however! Make it on a day when you’ve been particularly active.


Combine in a slow cooker:
-1 10oz package of frozen spinach (I used Cascadian Farms brand)
-1/2 jar salsa (your favorite brand; I use a fresh organic brand from my local grocer)
-4 oz cream cheese (organic if you can)
-1/2 cup half and half (organic if you can)


Cook on high for 2 hours.
Optional:  When it is done cooking, remove slow cooker lid and sprinkle ½ bag (about 4oz) of Mexican blend cheese. Replace lid until cheese is melted.

Transfer to your pretty party platter (with your crunchy carriers) and you are ready to go!
