My breakfast still has to pack in the protein, however, or I’ll be hungry just a few hours later.
One of my favorite things to do is to hard-boil some eggs on a weekend, and then use them as snack items and/or quick meal items during the week.
This week, I had some fabulous spinach on hand, so I quickly turned it into an incredibly delicious and satisfying breakfast. Just slice the peeled hardboiled eggs on to a plate of freshly washed spinach, and add a bit of shredded parmesan or asiago cheese (omit if you are going dairy-free). Lightly dress with olive oil and a pinch of salt, and your breakfast is ready. Enjoy!
